Colorful Rice Salad - cooking recipe
Ingredients

1 (10 oz.) pkg. frozen peas, thawed
3 c. cooked rice
1 (4 oz.) jar diced pimento, drained
6 green onions, chopped
4 hard-cooked eggs, chopped
2 c. (8 oz.) shredded Cheddar
1/2 c. sliced stuffed olives
1/2 c. chopped celery
1/3 c. sweet pickle relish
1/2 c. mayo or salad dressing
lettuce leaves (optional)
cherry tomatoes (optional)
Preparation

Combine first 9 ingredients and stir well.
Add mayo, tossing until well mixed.
Cover and chill thoroughly.
Serve on lettuce leaves and garnish with cherry tomatoes, if desired.
Yield:
8 servings.
