Chicken In Orange Sauce - cooking recipe

Ingredients
    1 (1 lb.) whole chicken breast, split and skinned
    1 small onion, sliced and separated into rings
    2/3 c. unsweetened orange juice
    2 Tbsp. dry sherry
    1 Tbsp. minced fresh parsley
    1/2 Tbsp. all-purpose flour
    3/4 tsp. grated orange rind
    paprika
    orange slices
Preparation
    Place chicken breast halves in a shallow 1-quart casserole. Arrange onion slices over each piece.
    Combine the next 5 ingredients in a small saucepan; bring to a boil, stirring constantly.
    Pour sauce over chicken.
    Cover and bake at 350\u00b0 for 30 minutes.
    Uncover; bake for 25 to 30 additional minutes, or until chicken is tender, basting occasionally with sauce. Sprinkle with paprika; garnish with orange slices.
    Yields 2 servings.
