Bacon-Cornmeal Muffins - cooking recipe

Ingredients
    1 c. self rising flour
    3 Tbsp. sugar (optional)
    8 strips bacon, cooked and crumbled
    1 egg
    1 c. buttermilk
    1/4 c. vegetable oil
Preparation
    Preheat oven to 425\u00b0.
    Grease muffin cups.
    Stir together cornmeal, flour and sugar, if desired, in mixing bowl.
    Combine buttermilk and oil together and add to dry ingredients, stirring until blended.
    Stir in crumbled bacon.
    Spoon batter into prepared muffin cups, filling each 2/3 full.
    Bake 15 to 18 minutes or until golden brown.
    Makes 12 med. muffins.
