Pittsburg Potatoes - cooking recipe
Ingredients

1 qt. potatoes, diced
1 onion, finely chopped
1 small can pimento
3 Tbsp. flour
4 Tbsp. butter
2 c. milk
1/2 lb. grated cheese
3/4 tsp. salt
1/8 tsp. pepper
Preparation

Boil potatoes in water with cover on for 5 minutes.
Add pimento and onion and cook until tender.
Drain and put in buttered dish.
Melt butter in saucepan; add flour and stir.
Add milk and bring to a boil.
Add cheese, salt and pepper.
Heat slowly until cheese melts.
Pour over potatoes.
Bake at 350\u00b0 until brown.
