Ingredients

1/4 c. honey
1/2 to 1 tsp. shredded orange peel
1/4 c. orange juice
1/4 c. lemon juice
1/2 tsp. salt
1 lb. can (2 c.) julienned beets, well drained
Preparation

In small mixing bowl, combine honey, orange peel, orange and lemon juice and salt.
Add beets.
Mix very gently.
Refrigerate several hous to overnight, turning occasionally.
Drain and serve as a relish.
