Cranberry Bread - cooking recipe

6 oz. (1/2 bag) cranberries, finely chopped
3/4 c. chopped walnuts
orange peel, grated (from 1 orange)
2 c. flour
3/4 c. honey
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 Tbsp. olive oil
3/4 c. orange juice
2 egg whites, beaten stiff
Preparation

Beat eggs until foamy; almost but not until stiff.
Add orange juice, oil and honey, mixing well.
Add all dry ingredients slowly, mixing well.
If mixture becomes dry, add cranberries intermittently.
Mix nuts in by hand and pour into loaf pan.
Bake at 350\u00b0 for 1 hour.
Cool in pan for 10 minutes, then cool on wire rack.
Wrap and refrigerate.
