Vegetable Quiche - cooking recipe

Ingredients
    1 1/2 c. cooked brown rice
    3/4 c. egg substitute, divided
    3/4 c. shredded low-fat Mozzarella cheese, divided
    1 1/2 c. chopped fresh broccoli
    3/4 c. sliced fresh mushrooms
    1/4 c. skim milk
    1 Tbsp. margarine, melted
Preparation
    In a bowl, combine rice, 1/4 cup egg substitute and half the cheese; mix well.
    Pat into bottom and sides of a 9-inch greased pie plate.
