Marian Jeffires' Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. grated zucchini (unpeeled)
1 c. (8 oz.) crushed pineapple, well drained
3 c. flour
2 tsp. soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 tsp. salt
1 c. raisins
1 c. chopped nuts
Preparation

Grease and flour two loaf pans.
Beat eggs lightly in large bowl.
Stir in oil, sugar, zucchini, pineapple and vanilla.
Sift flour, baking powder, soda, cinnamon, nutmeg and salt together. Stir into egg mixture until well blended.
Stir in raisins and nuts.
Pour into 2 well-greased and floured loaf pans.
Bake at 350\u00b0 for approximately 1 hour.
Cool in pans 10 minutes.
Remove from pans and cool completely.
Ice with caramel frosting.
