Ingredients

12 oz. skinless boneless chicken breasts, diced
2 Tbsp. rice vinegar or white vinegar
1/2 tsp. crushed red pepper
1 Tbsp. cornstarch
1/2 c. shredded Monterey Jack
1/4 c. grated onion
1/4 c. sliced grated onion
2 cloves minced garlic
2 Tbsp. soy sauce
1 Tbsp. olive oil
1/4 tsp. black pepper
pizza shell
1/2 c. shredded Mozzarella
2 Tbsp. sliced almonds
Preparation

Combine chicken, 1/4 cup onion, garlic, vinegar, soy sauce, oil and peppers in a large bowl.
Stir to coat chicken.
Let stand at room temperature for 30 minutes.
Drain; reserving marinade.
Heat 1 tablespoon olive oil in a large skillet; add drained chicken. Cook and stir about 3 minutes until no longer pink.
Stir cornstarch into reserved marinade.
Add to skillet.
Cook and stir until thickened and bubbly.
Spoon evenly onto pizza shell. Sprinkle with cheeses.
Bake, uncovered, in 400\u00b0 oven for 12 minutes.
Top with 1/4 cup sliced green onions and almonds.
Return to oven for 2 minutes.
