Orange Carrot Cake - cooking recipe
Ingredients

3 c. all-purpose flour
2 c. sugar
1 c. coconut
2 1/2 tsp. soda
2 1/2 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla
2 c. shredded carrots
1 1/2 c. cooking oil
1 tsp. grated orange peel
11 oz. can mandarin oranges, undrained
3 eggs
chopped walnuts or pecans (if desired)
Preparation

Heat oven to 350\u00b0.
Grease (not oil) 13 x 9-inch pan. (Lightly spoon flour into measuring cup.
Level off.)
In large bowl, blend all ingredients.
Beat 2 minutes at high speed.
Pour into greased pan. Bake at 350\u00b0 for 45 to 55 minutes or until toothpick comes out clean.
Cool and frost with Cream Cheese Frosting.
