Zucchini Bread - cooking recipe

3 eggs
2 c. sugar
1 c. oil
1 Tbsp. vanilla
2 c. unpeeled zucchini, grated
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon
1 c. chopped walnuts (optional)
Preparation

Set oven at 325\u00b0.
Beat eggs until fluffy, then add sugar slowly and beat well.
Add oil, vanilla, zucchini and dry ingredients.
Blend together thoroughly and add nuts (if desired). Pour batter into 2 greased loaf pans and bake about 1 hour.
Test for doneness with toothpick; if it comes out clean, the bread is done.
