Ingredients

4 c. buttermilk
4 c. old-fashioned oats
4 eggs
1/2 c. melted butter
1 c. flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. sugar
1/2 tsp. cinnamon or more to taste
1/2 tsp. salt (optional)
Preparation

Combine oats and buttermilk and refrigerate overnight.
Add slightly beaten eggs and melted butter to mixture.
In a medium bowl, combine flour, soda, baking powder, sugar, cinnamon and salt. Add buttermilk mixture, stirring enough to barely moisten dry ingredients.
For each pancake, drop 1/2 cup batter onto lightly greased griddle.
Cook until surface is bubbly and edges are slightly dry, then turn and cook other side.
This recipe makes about 26 pancakes.
Reduce ingredients by half for smaller family.
