Squash Relish - cooking recipe

Ingredients
    12 c. squash, grated
    4 large bell peppers, grated
    5 Tbsp. salt
    4 large onions, grated
    2 small jars pimientos
    2 1/2 c. vinegar
    2 tsp. pickling spice*
    1 1/2 tsp. turmeric*
    5 c. sugar
    2 1/2 tsp. celery salt
Preparation
    Mix squash, peppers, salt, onions and pimientos and let stand overnight.
    Next morning, drain and rinse.
    Mix the vinegar, pickling spice, turmeric, sugar and celery salt in a saucepan. Heat to a boil and boil for 10 minutes.
    Remove spices; mix squash mixture in and boil for 5 minutes.
    Put in hot jars and seal. Makes about 6 to 61/2 pints.
