Cornish Game Hens(With Rice And Mushroom Stuffing) - cooking recipe

Ingredients
    2 (1 lb.) cornish game hens
    salt
    pepper
    2 Tbsp. slivered almonds
    2 Tbsp. finely chopped onions
    1/3 c. uncooked long grain rice
    3 Tbsp. butter (or margarine)
    1 c. water
    1 chicken bouillon cube
    1 tsp. lemon juice
    1/2 tsp. salt
    1 (3 oz.) can chopped mushrooms, drained (1/2 c.)
Preparation
    Salt
    and
    pepper hens inside and out.\tIn small saucepan, cook
    almonds,
    onion
    and\trice
    in
    butter for 5 to 10 minutes, stirring
    often.
    Add
    water,
    bouillon
    cube, lemon juice\tand salt.
    Bring mixture to boil, stirring to dissolve bouillon
    cube. Reduce
    heat; cover and cook slowly for 20 to 25
    minutes\tor until
    liquid is absorbed and rice is fluffy. Stir\tin
    drained mushrooms.\tLightly
    stuff\tbirds with rice mixture.
    Place breast
    up\ton
    rack
    in
    shallow baking pan. Brush
    with
    melted butter.
    Roast covered in 400\u00b0 oven for 30 minutes.
    Uncover
    and roast for 1 hour longer or until drumstick\tcan
    be
    twisted easily
    in\tsocket.
    Brush birds with melted butter during last 15 minutes.
    Makes 2 servings.
