Mystery Blueberry Pie - cooking recipe

4 c. fresh blueberries
1/2 c. sugar
2 Tbsp. cornstarch
1/4 c. water
1 tsp. grated lemon rind
1 c. heavy cream
9-inch pie shell, baked
Preparation

Mash 1 cup blueberries.
In 2-quart saucepan, stir together sugar and cornstarch.
Gradually, stir in water until smooth. Stir in the mashed blueberries and lemon rind.
Cook over medium heat, stirring until thickened.
Boil gently for 1 minute.
Pour into a bowl; cover with wax paper; cool.
Fold in remaining blueberries.
Whip cream.
Spread 1 1/2 cups cream over bottom and sides of pie shell.
Fill with blueberry mixture.
Garnish with whipped cream.
Chill until set (3 hours).
