Gazpacho Chicken Salad - cooking recipe

Ingredients
    1 red bell pepper
    1 yellow bell pepper
    1 green bell pepper
    1 small onion
    1/2 c. olive oil
    1/4 c. white balsamic vinegar
    2 garlic cloves, minced
    1/2 tsp. salt
    1/4 tsp. ground cumin
    1/4 tsp. pepper
    4 c. shredded green leaf lettuce
    16 oz. roasted or grilled chicken, cut into thin strips
Preparation
    Chop and mix the peppers and onion. Whisk together olive oil, vinegar, garlic, salt, cumin and pepper. Add peppers and onion mixture to this and chill for 1 hour. Layer in a glass casserole: the lettuce, bell pepper mixture and chicken. Serve cold.
