Burrito Casserole - cooking recipe

Ingredients
    8 medium flour tortillas
    2 c. cooked pinto beans
    1/4 c. chopped onion
    1/4 c. chopped olives
    1 can enchilada sauce
    1/2 c. shredded Cheddar cheese
    toppings of your choice
Preparation
    Mix beans, onion and olives.
    Place 1/4 of mixture into each tortilla and roll.
    Place the rolled tortilla into a casserole dish and pour over the enchilada sauce.
    Top with cheese and bake at 375\u00b0 until bubbly.
    Serve topped with shredded lettuce, chopped tomatoes, chopped green onions, avocado, etc.
