Pasta With Tomato And Mozzarella Sauce - cooking recipe

Ingredients
    6 to 8 ripe tomatoes, peeled and coarsely chopped (reserve juice)
    1/2 lb. Mozzarella, shredded
    5 Tbsp. olive oil
    1 Tbsp. minced parsley
    12 oz. vermicelli pasta
    1/4 c. minced fresh basil
    2 cloves garlic, minced
    salt and pepper to taste
Preparation
    Combine tomatoes, juice, cheese, basil, oil, garlic, parsley, salt and pepper in a bowl and blend well.
    Let stand at room temperature for 1 hour.
    Cook pasta and drain.
    Combine hot pasta and sauce in large bowl and toss until cheese melts.
    Serves 4.
