Hoppin' Johns - cooking recipe
Ingredients

1 lb. black-eyed peas
1 c. chopped onions
1 c. uncooked rice
1 lb. sausage, browned and drained or 1 1/2 c. chopped ham
1/2 red pepper, chopped
salt and pepper to taste
Preparation
-
In a large pot, cook peas until 2/3 done.
Add remaining ingredients to peas and simmer until peas are tender, about 45 minutes.
Add warm water to make enough soup if needed.
Serve with corn bread.
Serve as one pot meal.
