Apricot Bread - cooking recipe
Ingredients

1 c. boiling water
1 1/2 c. dried apricots
1/2 tsp. baking soda
1 c. sugar
2 eggs
2 3/4 c. flour
1 Tbsp. baking powder
Preparation

Pour boiling water on apricots; let soak until tender.
Drain, reserving liquid; add additional water to measure 1 cup.
Chop apricots.
Mix liquid with baking soda, sugar and eggs; blend thoroughly.
Add apricots, flour and baking powder; mix well. Spread batter in 2 buttered and floured 9 x 5 x 3-inch loaf pans. Bake at 350\u00b0 for 45 minutes or until pick inserted near center comes out clean.
Remove loaves from pans and cool on wire rack.
