Real Scottish Shortbread - cooking recipe

Ingredients
    1/4 c. confectioners sugar
    1/4 c. superfine granulated sugar
    1/3 c. rice flour
    1 2/3 c. unbleached flour
    1 c. butter (room temperature)
Preparation
    Heat oven to 325\u00b0.
    Mix confectioners sugar and granulated sugar in a small bowl.
    Mix the flours together in a separate bowl.
    In a large bowl, thoroughly cream butter and the sugar mixture.
    Gradually add the flour mixture.
    Mix with your hands until the dough is smooth.
    Do not overwork.
    Roll out to 1/2-inch thickness.
    Prick with a fork.
    Cut into 2 inch squares.
    Bake on ungreased cookie sheet until medium brown, about 25 minutes.
