Aunt Katie'S Gumbo - cooking recipe
Ingredients

4 to 7 Tbsp. oil
3 Tbsp. flour
1 qt. water
1 large bag cut okra
1 can tomatoes
3 green peppers, chopped
2 stalks celery
3 green onions
2 lb. lite sausage, cut in 1-inch lengths
1 chicken, deboned
Preparation

Mix oil and flour in large pot over high heat until very brown, stirring frequently to avoid scorching.
Add water, okra, chicken, tomatoes, peppers, green onions, celery and salt to taste.
Simmer over medium heat for 2 hours.
Add sausage; continue to simmer for 1 hour.
Serve hot over rice, if you choose.
Serves 4 to 8.
