A Taste Of Hawaii(Honey-Ginger Chicken) - cooking recipe

Ingredients
    1 fresh pineapple
    4 boneless chicken breast halves
    2 garlic cloves, minced or pressed
    1/2 tsp. salt (optional)
    1/4 tsp. ground back, red or white pepper
    2 tsp. olive oil
    1 small onion, chopped
    1 Tbsp. minced gingerroot
    1/4 c. water
    2 Tbsp. honey
    2 Tbsp. dry sherry
    2 tsp. cornstarch
    1 c. pineapple juice
    1 Tbsp. fresh lime juice
    1 Tbsp. grated lime peel
    1/2 small red bell pepper, seeded and cut into slivers (1/2 c.)
    2 c. cooked white or brown rice (optional)
Preparation
    Twist crown of leaves from pineapple.
    Using sharp knife, halve pineapple lengthwise (refrigerate unused half).
    Cut fruit from shell, then into chunks; set aside.
    Place chicken between 2 sheets of waxed paper; using wooden mallet or rolling pin, pound chicken to 1/2-inch thick cutlets.
    Rub chicken with garlic; season with salt (if desired) and pepper.
