Zucchini Bread - cooking recipe

Ingredients
    2 c. grated zucchini
    2 c. sugar
    3 eggs
    1 c. oil
    3 c. flour
    1 tsp. vanilla
    1 tsp. baking soda
    1/2 tsp. baking powder
    1 tsp. salt
    1 (scant) tsp. cinnamon
    1 c. raisins
    nuts (optional)
    cherries (optional)
    pineapples (optional)
Preparation
    Steam raisins and let set 1 hour; drain.
    Beat sugar, eggs and oil until fluffy.
    Add flour, vanilla, baking soda, baking powder, salt and cinnamon.
    Stir in zucchini and raisins.
    Fill half 2 or 3 loaf pans.
    Bake at 325\u00b0 for 3/4 to 1 hour.
