Escalloped Potatoes(Serves Approximately 50 People.) - cooking recipe

Ingredients
    10 lb. potatoes, peeled and sliced
    1/2 gal. milk
    1/2 c. flour
    3/4 c. margarine or less
    1 can cream of chicken soup
    8 to 10 slices American cheese
    1 medium onion (optional)
    salt and pepper to taste
Preparation
    Melt margarine; add flour gradually to make a thick base.
    Add 1/2 milk gradually and alternate with soup until all has been added to base.
    Using large roaster sprayed with Pam, pour white sauce in bottom to cover.
    Add layer of potatoes, then more of sauce until all is used, ending with sauce.
    You may have to add more milk.
    Bake in 350\u00b0 oven until done.
    Remove lid to brown top if desired.
