Vidalia Onion Scallop - cooking recipe

Ingredients
    3 medium Vidalia onions
    1/4 c. butter
    1/4 c. chopped green pepper
    2 Tbsp. chopped pimiento
    1 c. grated Swiss cheese
    1 c. cracker crumbs
    2 eggs, beaten
    3/4 c. light cream
    1 tsp. salt
    1/8 tsp. white pepper
    2 Tbsp. butter, melted
Preparation
    Preheat oven to 350\u00b0.
    Peel and slice onions.
    Melt 1/4 cup butter in skillet.
    Add onions and green pepper.
    Cook until tender.
    Stir in chopped pimiento.
    Place half of onion mixture in shallow baking dish.
    Sprinkle with 1/2 cup grated cheese and 1/2 cup cracker crumbs.
    Repeat layers of onions and cheese.
    Beat eggs with light cream, salt and pepper.
    Pour over onions. Combine remaining cracker crumbs with melted butter.
    Sprinkle over top.
    Bake at 350\u00b0 for 25 minutes, or until set.
    Yields 6 to 8 servings.
