Pineapple Meringue Pie - cooking recipe
Ingredients

1 c. sugar
1/4 c. cornstarch
1/2 c. water
1 c. pineapple juice
3 egg yolks, beaten
3 Tbsp. oleo
1 Tbsp. lemon juice
1 1/2 tsp. grated lemon rind
1 1/4 c. well drained crushed pineapple
Preparation

Mix sugar and cornstarch.
Stir in water and pineapple juice; cook until mixture thickens and boils.
Add small amount to egg yolks, then return to hot mixture.
Boil a minute longer.
Remove from heat.
Add butter or oleo, lemon juice and rind, then pineapple.
Pour into a cooled pie shell.
Top with meringue; brown in oven.
Cool.
