Lemon Pie Filling - cooking recipe
Ingredients

3 egg yolks
1 1/2 c. sugar
2 c. milk
2 Tbsp. flour
4 Tbsp. cornstarch
1/4 tsp. salt
3 Tbsp. butter
1/2 c. lemon juice
1 1/2 tsp. lemon rind
Preparation

Beat egg yolks until thick; add sugar.
Mix some milk with the flour, cornstarch and salt to make a thin paste.
Scald remaining milk; add a little to each of the 2 mixtures.
Then slowly stir the 2 mixtures into the scalded milk.
Should be cooked in a double boiler over boiling water.
Remove from heat; add butter, juice and lemon rind.
Cool before putting in crust.
For meringue, bake in 300\u00b0 oven until just light brown.
