Low-Fat Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 Tbsp. plus 1 tsp. sugar
    4 tsp. baking powder
    1 tsp. salt
    1/2 c. egg substitute
    3/4 c. milk
    1/4 c. applesauce
Preparation
    In a mixing bowl, combine flour, sugar, baking powder and salt. Make a well in the center.
    Combine egg substitute, milk and applesauce.
    Pour into well and mix just until dry ingredients are moistened (do not overmix).
    Spoon into greased muffin cups.
    Bake at 400\u00b0 for 20 to 25 minutes or until golden brown.
    Yields 1 dozen.
    Freeze well.
