Potato Pancakes - cooking recipe

Ingredients
    4 or 5 medium size potatoes, grated
    1 small onion (optional)
    2 eggs
    3 Tbsp. flour or more (so batter is not too watery)
    1 tsp. baking powder
    1/2 Tbsp. vinegar (keeps potatoes from darkening)
    1/2 tsp. salt or to taste
Preparation
    Grate potatoes and onion on fine grater.
    (Place grater in colander; this removes
    excess
    starch.)
    Transfer
    grated potatoes to clean bowl.
    Add
    other ingredients.
    Place 1 inch of oil in frying pan.
    Heat.
    Place approximately 1 tablespoon of batter in pan; fry until edges
    are golden brown.
    Turn and fry on other side.
    Place between
    2
    sheets of paper toweling to remove excess grease.
