Loaf Bread - cooking recipe

Ingredients
    1 cake yeast
    1/4 c. lukewarm water
    2 c. milk
    2 Tbsp. sugar
    2 Tbsp. salt
    1 Tbsp. shortening
    6 c. sifted enriched flour
    4 Tbsp. wheat germ
Preparation
    Soften yeast in lukewarm water.
    Scald milk; cool to lukewarm. Add sugar, salt and 2 cups flour; mix thoroughly.
    Stir in softened yeast, then melted shortening.
    Add remaining flour and wheat germ to form soft dough.
    Turn out on lightly floured board; knead until dough is smooth and satiny (about 8 minutes).
    Form into smooth ball; place in lightly greased bowl.
    Cover; let rise in warm place (80\u00b0 to 85\u00b0) until doubled in bulk.
    Punch down; let rise again. When light, punch down and divide into equal portions.
    Shape each into ball.
    Cover well; let rest for 5 to 10 minutes.
    Shape into loaves; place in greased pans.
    Cover; let rise until doubled. Bake in moderately hot oven (400\u00b0 to 425\u00b0) for 45 minutes.
    Yields two 1-pound loaves.
