Mexican Rice - cooking recipe

Ingredients
    green olives (if desired)
    1 c. rice (use converted rice)
    2 Tbsp. cooking oil
    1 clove garlic
    1 large onion, diced
    2 diced green chilies
    2 medium tomatoes, diced
    2 c. beef stock
Preparation
    Brown rice in hot cooking oil.
    Add onions, tomatoes, chilies, garlic and beef stock; bring to a boil.
    Simmer until rice is soft and all moisture is removed.
