Diabetic Cake - cooking recipe

Ingredients
    2 c. water and 2 c. seedless raisins or 1 pkg. dates, chopped
    1 c. unsweetened applesauce
    2 eggs or 1/2 pkg. Egg Beaters
    1 Tbsp. sweetener
    3/4 c. oil
    1 tsp. baking soda
    2 c. flour (self-rising or plain, just go by the recipe)
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. vanilla
    1/2 to 1 c. chopped nuts (optional)
Preparation
    Cook raisins in water until water is gone or just add chopped dates.
    Add applesauce, eggs, liquid, sweetener and oil.
    Mix well.
    Mix together the dry ingredients and blend in with the applesauce mixture.
    Add vanilla.
    Bake in a loaf pan or tube pan in a 350\u00b0 oven for 45 minutes or until done.
