Baked Spinach Country Style - cooking recipe

Ingredients
    2 (10 oz.) pkg. frozen, chopped spinach
    2 Tbsp. minced onion
    3 Tbsp. butter
    3 Tbsp. flour
    2 c. milk
    3 hard-cooked eggs, finely chopped
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. cracker crumbs
    2 Tbsp. melted butter
    1/2 c. shredded process cheese
Preparation
    Cook spinach in boiling, salted water until tender; drain thoroughly in sieve.
    Meanwhile, cook onion in 3 tablespoons butter until soft.
    Stir in flour, then milk.
    Cook, stirring constantly, until mixture comes to a boil.
    Remove from heat and add eggs, salt and pepper.
    Stir in spinach.
    Place in greased 1 1/2-quart casserole.
    Toss cracker crumbs with melted butter, then cheese.
    Sprinkle over top of casserole.
    Bake in moderate oven (350\u00b0) for 25 minutes or until bubbling.
    Makes 6 servings.
