Ingredients

2 eggs or 4 egg whites, beaten
2 c. raisins
3 c. water
1 c. unsweetened applesauce
3 Tbsp. liquid sweetener or 3/4 c. Sugar Twin
3/4 c. oil
1 tsp. vanilla
1/2 tsp. nutmeg
2 c. flour
1 c. nuts (optional)
1 tsp. soda
1 1/2 tsp. cinnamon
Preparation

Combine and cook raisins in water until water is absorbed. Cool.
Combine eggs, applesauce, oil, vanilla and Sugar Twin. Sift flour, soda and spices.
Add to egg mixture.
Add raisins and nuts.
Pour into greased and floured Bundt or tube pan or flat baking pan (batter will be thin).
Bake at 350\u00b0 for 1 hour.
