Zucchini-Carrot Squares * - cooking recipe

Ingredients
    4 medium unpeeled zucchini, shredded
    1 tsp. salt
    2 large onions, diced
    4 Tbsp. oil
    1/2 tsp. pepper
    3 large carrots, shredded
    3 eggs, beaten
    1/2 c. bread crumbs
    1/4 c. wheat germ
    6 Tbsp. flour, sifted
    1/2 tsp. oregano and thyme
    2 Tbsp. margarine
Preparation
    Sprinkle zucchini with salt.
    Let stand 15 minutes.
    Squeeze out liquid.
    Saute onions in oil until soft.
    Remove from heat and combine with remaining ingredients, except margarine.
    Put into 9 x 13-inch pan.
    Dot top with margarine before baking.
    Bake in preheated 375\u00b0 oven for 1 hour.
    Cover during last 15 minutes.
    Cut into squares.
    Serve hot.
    Yield:
    12 to 15 squares.
