Cheese Zucchini Casserole - cooking recipe
Ingredients

1 lb. ground beef
1 medium onion
1 c. quick rice
1 tsp. salt
1 can mushroom soup
1/2 lb. sliced zucchini
2 c. cottage cheese
1 c. grated mild Cheddar cheese
1/2 tsp. oregano
Preparation

Cook zucchini until barely tender in salted water.
Saute beef and chop onion until beef is lightly browned.
Add rice and seasonings.
Place zucchini in 1 1/2-quart casserole.
Cover with beef mixture.
Spoon in cottage cheese and all remaining zucchini. Spread soup over top and sprinkle with grated cheese.
Bake at 350\u00b0 for 35 minutes or until bubbly.
