Southern Hopping John - cooking recipe
Ingredients

2 c. (No. 2) canned black-eyed peas
8 slices bacon, diced
1 1/2 c. chopped onion
1 green pepper, chopped
2 buds garlic (optional)
4 c. water
2 c. uncooked rice
salt and pepper
Preparation

Fry bacon until brown.
Add onion and green pepper and cook until tender.
Combine with peas and water.
Add salt, garlic and pepper.
Bring to boil and simmer, covered, for 30 minutes.
Stir in uncooked rice and simmer 30 minutes longer or until rice is tender and fluffy.
Serves 8.
