Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. brown sugar, packed
1 c. oil
2 c. peeled, grated zucchini (small ones)
1 tsp. vanilla
3 c. flour
1 c. chopped walnuts (optional)
3 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
Preparation

Beat eggs and oil together; add brown sugar, zucchini and vanilla.
Cream together.
Add dry ingredients and nuts.
Mix well.
Grease and flour pans (I use 4 small loaf pans).
These breads freeze well and make great gifts.
