Cheese Stuffed Zucchini - cooking recipe
Ingredients

1 zucchini
3/4 onion
1 tsp. butter
3/4 c. cottage cheese
2/3 c. cooked rice
1 egg, slightly beaten
cheese or Cheez Whiz
Preparation

Trim ends of zucchini.
Cook in salt water for 8 minutes. Halve lengthwise.
Scoop out center and dice.
Cook onion in 1 teaspoon of butter until tender.
Stir in zucchini plus cottage cheese, rice and egg beaten.
Mix all together; fill zucchini. Bake 25 minutes covered at 350\u00b0.
Place strip of cheese or Cheez Whiz on top.
Bake uncovered until cheese is melted.
