Italian Beef Roast - cooking recipe

Ingredients
    4 or 5 lb. beef roast
    1 carrot, diced
    1 clove garlic, crushed
    3/4 c. wine
    1 green pepper, sliced
    1 stalk celery, diced
    1/4 c. Parmesan cheese
    1 c. water
Preparation
    Saute green pepper, carrot and garlic.
    Pour ingredients over meat.
    Place in Dutch oven, covered.
    Roast meat in 300\u00b0 oven for 3 to 4 hours.
    Slice meat very thin when cooled.
