Ingredients

strip cuts of round steak (any round)
1/2 c. plus 1 Tbsp. sugar
1 c. salt
1 tsp. salt peter (sodium nitrate)
Preparation

Save half of mix and set aside.
Rub 1/2 on meat.
Refrigerate 3 days.
Remove and rub on other half of saved mixture.
Dry at room temperature for approximately 3 days.
