Raspberry Chicken Breasts(Microwave) - cooking recipe
Ingredients

4 skinless, boneless chicken breast halves
2 tsp. finely chopped ginger root
1/3 c. raspberry preserves
2 tsp. raspberry flavored vinegar
Preparation

Arrange chicken breast halves with thickest part to the outside edge in a square dish (8 x 8 x 2-inch).
Sprinkle with ginger root.
Microwave on High for 8 to 10 minutes, rotating dish half turn after 4 minutes.
Mix preserves and vinegar in 1-cup measure.
Microwave 30 to 60 seconds, or until warm.
Serve over chicken.
Serve with rice pilaf and fresh raspberries as garnish.
