Baked Spinach With Raisins - cooking recipe

Ingredients
    2 Tbsp. raisins
    4 eggs, beaten lightly
    3 Tbsp. softened cream cheese
    1/4 tsp. salt
    1/8 tsp. nutmeg
    1/8 tsp. cinnamon
    1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
    3/4 c. half and half
    3/4 c. grated Monterey Jack cheese
    1 tsp. white wine vinegar
Preparation
    In a small bowl, let the raisins soak in hot water for 30 minutes or until they are plump.
    Drain.
    In another bowl, combine well the eggs, cream cheese, salt, nutmeg, cinnamon and stir in the spinach, the raisins, the half and half, the Jack cheese and the vinegar.
    Transfer the mixture to a buttered 9-inch glass pie plate and bake in a preheated 400\u00b0 oven for 20 to 25 minutes or until it is set and puffed slightly.
    Cool for 2 to 3 minutes before serving, noting that pie will collapse a bit.
    Serves 6 to 8.
