Asparagus And Red Potato Salad - cooking recipe

Ingredients
    1 1/2 tsp. minced garlic
    2 1/4 tsp. Dijon mustard
    6 Tbsp. balsamic vinegar
    salt
    1 c. extra virgin olive oil
    2 lb. red potatoes (small)
    2 lb. asparagus
    1/2 c. chopped scallions
    pepper
    1/4 c. chopped parsley
Preparation
    Mix garlic, mustard, vinegar and 3/4 teaspoon salt, adding olive oil gradually.
    Set aside.
    Boil potatoes approximately 20 minutes.
    When cool, cut into quarters.
    Boil asparagus (cut into 2-inch pieces) 4 minutes.
    Drain and refresh under cold water. Heat dressing until hot, then mix potatoes, scallions and asparagus.
    Pour hot dressing over.
    Toss and serve.
