Eggplant Stew(Yukh-Net Batinjan) - cooking recipe

Ingredients
    1 lb. lamb, cubed
    5 medium eggplant, cubed
    1 large onion, chopped
    3 Tbsp. butter
    1 (No. 2) can tomatoes
    salt and pepper to taste
Preparation
    Boil meat in water for 30 minutes.
    Fry onion in butter, then add to meat.
    Add the cubed eggplant, tomatoes and seasonings and cook on medium heat for 30 minutes.
    Serves 6 to 8.
