Beef Enchiladas - cooking recipe
Ingredients

1 lb. ground beef
1 medium onion, chopped
1 Tbsp. chili powder
2 tsp. salt
12 corn tortillas
2 Tbsp. shortening
1/2 lb. American cheese, grated
1 pt. enchilada sauce
Preparation

Brown meat, onion, chili powder and salt in skillet; drain the grease.
Soften tortillas, one at a time, in skillet with grease over low heat.
Immediately fill tortillas with meat mixture; roll and place in greased 9 x 13-inch baking pan.
Sprinkle 1/2 of the grated cheese and chopped onion on top of tortillas; pour on 1/2 of the enchilada sauce.
Repeat remaining cheese, onion and sauce. Heat in a 350\u00b0 oven for 15 to 20 minutes or until cheese melts. Yields 6 servings.
