Rhubarb Lemon Pie - cooking recipe
Ingredients

3 c. diced rhubarb
1 c. sugar
1 Tbsp. flour
1 egg, beaten
3/4 Tbsp. grated lemon rind
1 Tbsp. lemon juice
1/2 c. water
1 to 2 tsp. almond flavoring (optional)
Preparation

Combine sugar and flour and stir in egg, lemon rind, juice and water; cook over boiling water until slightly thickened.
Pour over rhubarb and top with a lattice crust.
Bake in hot oven (450\u00b0) for 10 minutes then reduce heat to 350\u00b0 and bake an additional 20 to 30 minutes.
Makes 1 (9-inch) pie.
