Cheese-Mushroom Cups - cooking recipe

Ingredients
    1 c. chopped onion
    2 c. chopped fresh mushrooms
    3 Tbsp. margarine
    3/4 c. (3 oz.) shredded Mozzarella cheese
    1/4 c. grated Parmesan cheese
    1/2 c. chopped fresh parsley
    2 egg yolks, slightly beaten
    1 tsp. dried oregano
    1 tsp. salt
    1/2 tsp. pepper
    8 slices white bread
    1/2 c. margarine, melted
Preparation
    Heat oven to 350\u00b0.
    In medium skillet, saute onions and mushrooms in margarine.
    Remove from heat; stir in cheeses, parsley, egg yolks, oregano, salt and pepper.
    Trim crusts from bread; cut each slice into 4 equal squares.
    Roll pieces flat with rolling pin.
    Dip bread squares into melted margarine.
    Fit into mini-muffin cups.
    Fill each cup with mushroom-cheese mixture. Bake for 20 to 25 minutes.
    Makes 32 appetizers.
    (Can be prepared ahead of time, frozen and reheated just before serving.)
