Sweet Potato Balls - Satsumaimo No Chakin-Shibori - cooking recipe

Ingredients
    1 lb. sweet potatoes
    2 Tbsp. sugar
    1 to 2 Tbsp. sweet green tea powder
    3 Tbsp. water (reserved from boiling sweet potatoes)
Preparation
    Peel the potatoes and cut into several pieces.
    Soak in water for 10 minutes and drain.
    Boil until tender.
    Drain, reserving 3 tablespoons of water.
    Mash potatoes while hot.
    Dissolve the tea in 1 1/2 tablespoons of the reserved water and combine with 1/2 the mashed potatoes.
    Divide into 8 portions.
    Dissolve the sugar in the remaining water and mix into the other half of the mashed potatoes.
    In the center of a small piece of plastic wrap, place one portion each of both kinds of mashed potato; wrap up and twist, using both hands.
    Remove wrap.
    Makes 8 balls.
